El Segundo Brewing Company’s The Slice & Pint is the restaurant spinoff of the successful El Segundo Brewing Company, one of the first craft brewers in the South Bay. Earlier in the year before “Stay at Home” they celebrated their Year Anniversary. They closed for a bit but have reopened with vigorous sanitary protections for takeout and packaged beer sales. On the menu are a variety of pizzas created from a dough that ferments and proofs for multiple days, and salads and sandwiches. Proprietor Rob Croxall and Chef Matt Ranney join us to celebrate the reopening with an appropriate slice and pint.

Chef Shelly Register is the highly accomplished founding Market Chef for A Market located in a highly visible historic building on West Coast Highway in Newport Beach next to A Restaurant (the former Arches location.) It’s a dazzling gourmet convenience store with freshly-prepared gourmet sandwiches, incredible baked goods and desserts, cheeses, coffee, craft beer and premium wine. No product is carried in the store that hasn’t received Chef Sherry’s personal seal of approval. A Market is open for takeout during the moratorium on dine-in. We’ll chat with Shelly Register who is also a noted pastry chef and bread baker.

Last year Georgia’s Restaurant extended their family with the Grand Opening of their second location at the new Long Beach Exchange (LBX). Both locations are open for Curbside Pick-up and 3rd party delivery. Co-Founder Nika Shoemaker-Machado is our hospitable guest with the update.

Chef Steve Samson’s Rossoblu has been a big success since its opening Downtown in the Fashion District in 2017. Rossoblu has just reopened for contactless curbside pickup on Wednesday through Sunday. They are offering handmade pastas, sauces, prepared food, grocery items, wines under $35 and negronis. Chef Steve’s almost adjacent, fast casual Superfine Pizza (around the back of City Market South) is also open for takeout and delivery.

Our own Chef Andrew Gruel of the Slapfish Restaurant Group provides another timely and informative “Ask the Chef” segment where Chef Andrew responds to listeners thoughtful inquiries. Chef Andrew is updating us on the impact of the Covid-19 crisis in the hospitality field and what we, as diners, can do to support the very survival of restaurants. Rossoblu suggests ordering ahead via the Website from 3:30 p.m. to 8:00 p.m. Wednesday thru Sunday. Guests can order one hour to three days in advance of pickup.

Rossoblu’s Website has helpful written and video instructions on the preparation of the food items at home.

Chef Steve’s almost adjacent Superfine Pizza at City Market South is a homage to the old world’s and new world’s finest pizza-making traditions. “We’ve picked our favorite elements from each and bolstered them with the freshness of our local produce to create a blended trifecta of deliciousness. Show 345, October 19, 2019: Travel Journalist Darley Newman, “Travels with Darley” on KCET Part One

Darley Newman“Travels with Darley” takes viewers around the world with Emmy-nominated host Darley Newman and locals as the guides to experience culture, cuisine, history and outdoor adventure.

The broadcast version debuted locally on Public Television’s KCET in September, taking viewers through Europe, Asia, the Caribbean and the USA. For Southern California viewers “Travels with Darley” airs Monday through Friday at 6:30 p.m. The new season marks the 41st half hour of the series aired over 7 seasons.

Season 8 of “Travels with Darley” is in production right now. The Greater L.A. and Orange County show includes visits in Costa Mesa to Wahoo’s Fish Taco, Vaca Restaurant (with Chef Amar Santana) and Blackmarket Bakery.

“Darley Newman is a travel expert, media entrepreneur, and author who channeled her passion for travel and storytelling into a dream career. Through her production company, DCN Creative, she is the creator, producer and host of internationally broadcast travel shows, “Travels with Darley” and Emmy Award-winning, “Equitrekking.” She also popularized the niche genre of equestrian tourism and often appears as a travel expert on leading media, including USA Today, The Washington Post and Forbes.”

Show 328, June 15, 2019: Taco Transit Tuesday with Wing Lam of Wahoo’s Fish Taco and OCTA’s Jennifer Bergner

Jennifer Bergner of OC Transit and Wing Lam of Wahoos Fish TacoWing Lam of Wahoo’s Fish Taco is at it again with a special promotion…Ride OC Transit and get a free taco (with purchase) on Tuesdays from any Southern California Wahoo’s Fish Taco location. It’s Taco Transit Tuesday.

The ongoing program, which began in April, allows transit riders to visit any participating Wahoo’s restaurant in Southern California each Tuesday, and when they show a valid OC Bus, OC Flex or Metrolink pass, they can get a free taco with the purchase of a taco.

Wing Lam, co-founder of Wahoo’s is a supporter of public transit to help sustain the environment.

“We all need to do our part: Use less plastic straws and bags, recycle what we can, and use public transportation when possible,” Lam said when the promotion began.

OCTA operates more than 500 buses in the OC Bus system, helping people get to their destinations across Orange County for $2 per ride or $5 per day.

Riding in on an OC Bus with all the details are Wing Lam and Jennifer Bergner, OCTA’s (Orange County Transit Authority) Chief Operating Officer.

Michael Cho of Palmieri, Tyler, Wiener, Wilhelm & Waldron LLPWing’s colleague and long-time friend, Michael C. Cho, esq.  joined the discussion. Michael is an attorney with a busy practice in the hospitality industry in Southern California and is an expert in liquor license issues. He’s also a wine aficionado and was part of the festivities at Kosta Browne Wines. He was serving Wahoo’s fish tacos alongside Wing to the hungry and appreciative guests.

Mike shared the story of the founding of Wahoo’s by Wing and his brothers Ed and Mingo. Their father owned the iconic Shanghai Pine Garden Chinese Restaurant on Balboa Island where they worked when they were in high school. John Wayne was a regular.

When Wing rejoined the discussion he talked about the upcoming OC Wahoo’s 5K this Sunday, May 5th at the OC Fair & Events Center. It’s part of the OC Marathon and Half Marathon Day Experience. Wing will sound off the gun at the race’s start.

The first 800 finishes will get a free Wahoo’s Fish taco and everyone 21 and over gets a free beer!

Kale, a current darling of chefs, was next on the menu. Kale salad seems to have popularized the current trend. The book includes a wonderful recipe for Kale Salad with Dates and Almonds.

Cathy concluded the conversation explaining the recipe for Kale and Cannellini Beans with Crumbled Sausage enjoyed by her daughter.

This is a handy book for reference that’s a must for any home cook.
