The 5th Annual Firkfest Cask Beer Festival is back on March 24th at the Anaheim Packing District Farmers Park. This year, again, it’s a Tiki theme. All the cask beers served are made specifically for the event. They may never be brewed again. Founder, organizer, and local beer writer Greg Nagel taps the cask for us.

Chef Zov Karamardian, founder of Zov’s Restaurants, will receive the Epicenter Award honoring her passion and commitment for creating a strong and healthy community from the Alzheimer’s Association at their Women #ENDALZ Luncheon at the Fashion Island Hotel in Newport Beach on April 13th. Chef Zov and Anne Grey, Executive Director for the Alzheimer’s Association, join us.

From the Arabian Sea to the peaks of the Himalayas, cuisine in Karachi is as diverse as its inhabitants and draws influences from across South, Central, and West Asia. Acclaimed Pakistani chef, culinary educator, humanitarian, and food stylist, Kausar Ahmed, has curated and created mouth-watering recipes in her first cookbook, The Karachi Kitchen – Classic and Contemporary Flavors of Pakistan. Chef Kausar is unusually in Santa Monica on Sunday, March 25th presenting a multi-course Pakistan feast from The Karachi Kitchen to benefit the Careers through Culinary Arts Program (C-CAP.) Chef Kausar is our guest.

Hartley-Ostini Hitching Post Wines are made by Buellton Hitching Post owner / chef Frank Ostini (made famous in in the Oscar-winning feature motion picture “Sideways”) and his good friend, former fisherman Gray Hartley. Frank and Gray first made wine at home in 1979. They found their first Pinot Noir in 1981. The project moved to a winery in 1984 to make wines exclusively for the Hitching Post Restaurant. Their passioned focus has been to work with the California Central Coast’s best vineyards producing many Pinot Noirs, a couple Syrahs and a red blend of Merlot.

Figueroa Philly, arguably Los Angeles’ number one destination for the most authentic Cheese Steaks and Hoagies, is celebrating its favorite holiday, National Philly Cheese Steak Day, on Saturday, March 24, with a delicious giveaway. The first 100 fans on line next Saturday morning will receive a signature Classic Figueroa Philly Cheese Steak Sandwich absolutely free of charge ($8.85 value). Rocky would be proud. Proprietor Danny Hizami slathers on the processed Cheez Whiz.

Our always informed Co-Host, Chef Andrew Gruel, encores with his “Ask the Chef” series. Tilapia is one of those better-for-you fish that just doesn’t get enough deserved respect or visibility. It’s slowly changing. Tilapia can be successfully farm-raised in a healthy, pristine environment. It’s mild tasting and versatile for use in a lot of satisfying recipes. The fish is also hugely affordable. Chef Andrew reels the specifics in for us.

“Of the hundreds of different flavors of beer, a large portion can be described as “tropical”. Whether it be IPAs bursting with mango, pineapple, or passion fruit hoppy notes; stouts with Pina Colada and Mai Tai vibes, or even Belgian-style beers with Zombie cocktail overtones…don’t be surprised to see this year’s Firkfest beers to include “aged in rum barrel” or have actual barbecued pineapple making up the event’s beers.”

New this year is the well-respected OC Bartenders Cabinet will be shaking up actual Tiki cocktails for demonstration and sampling. Several bartenders are teaming up with breweries to also collaborate on tropical/tiki-style cask beers.

“Looking at the previous Firkfest events, I saw a common denominator: tropical-style beers seemed to stand out. As a huge cocktail nerd that loves Tiki culture, it’s time for the area’s craft brewers to come together, throw on some grass skirts, and make something truly unique,” says founder, organizer, and local beer writer Greg Nagel, @OCBeerBlog.

Tickets are $50 including fees, all profits supporting the historic Anaheim Fall Festival and Halloween Parade, an event that celebrates a 95-year history. Event tickets are by-design, limited, as the producer keeps things intimate. “It’s a park-like atmosphere, where people chill on beach blankets and chairs,” says fest-man Nagel.

Zov is celebrating by offering popular menu items at throwback prices. During the last week of each month (through November 4th.) Zov’s locations in Anaheim, Irvine, Newport Coast and Tustin will feature one dish at its original menu price.

“These flavors represent the foundation of my cooking,” Chef Zov said. “Over the years some of these dishes may have come and gone, but seemingly they have not been forgotten. We’re excited to share these special menu items in celebration with our longtime guests.”

Happy to note The Orange County Register’s long-time Food Editor, Cathy Thomas, is back (after a year’s absence) contributing to the paper. This week’s feature is Orange County chefs talk about – and share recipes for – the dishes they just can’t ditch.” One of these highlighted recipes is Zov’s creation of Sauteed Calamari with shallots, lemon, fresh herbs and chardonnay butter sauce.

Inspired by (and later a friend to) Julia Child, Zov has authored 2 popular cookbooks while growing her restaurant group to locations in Anaheim, Irvine, Newport Coast, Tustin and John Wayne Airport. San Clemente will debut next.

Zov’s was awarded the 2015 Small Business Award by the State of California, and Zov had the honor of cooking at the James Beard Foundation in Manhattan for the third time in late 2015. She was honored as the 2016 Golden Foodies Chef of the Year by the Orange County Restaurant Association.

It’s for 1,500 VIP guests including Oscar winners and Nominees in the Ray Dolby Ballroom on the top level of the Hollywood & Highland Center. It starts immediately followiing the Oscar telecast.

Working alongside Chef Puck is Wolfgang Puck Catering’s Executive Chef and Vice President, Culinary, Eric Klein (formerly Executive Chef & Partner of Spago Las Vegas.

The culinary team creates more than 50 imaginative dishes from one-bite hors d’oeuvres to small-plate entrees that will be passed throughout the evening.

Some 32,000 plates of food will be enjoyed by the guests served by a team of 10 maitre d’ staff, 950 service and support staff and 300 culinary staff.

On the order list for the Governors Ball is 350 pounds of Atlantic Bigeye tuna, 10 kilos of American, farm-raised caviar, 250 Maine lobsters, and 800 stone crab claws.

OC Chef’s Table is one of the county’s most exclusive charitable culinary events where OC’s top chefs come together to create a delectable five-course meal prepared tableside at tables decorated to reflect the personality and brand of each participating restaurant. Every restaurant and chef participating has been personally chosen to host a table at the gala due to their earned accolades for their impressive culinary skills or innovations.

“Nearly 1 in 6 children face homelessness in OC. There are too many families with children that struggle to secure a roof over their heads every night.  It shouldn’t be like this. Children should have the right to a happy and stable childhood. We can’t thank these extraordinary chefs enough for accepting to donate their time, talent and culinary knowledge to help us build a second emergency house in Orange County. This event is going to be an amazing experience for our guests, a creative challenge for the chefs and eye-opening for everybody. With every emergency house we build we start rebuilding the lives of 100 suffering families per year. The ice cream is still handmade in small batches in Alhambra. Fosselman’s has just introduced a flavor line of soft serve ice cream for restaurants. Gourmet food trucks are the norm in California these days but the evolution (and legalization) in Montreal and Quebec Province, Canada was a much more recent development. Quality trucks there now prepare such eye-popping delicacies as foie gras poutine which is an incredible item ! C-CAP has organized a dinner in her honor to benefit the new Mitzie Cutler Scholarship Fund to provide high school students in the Los Angeles area the opportunity to attend culinary college and/or postsecondary school. The multi-course, wine-paired sumptuous repast will be presented at The Jonathan Club’s Rooftop Garden and in the Members’ Dining Room on Tuesday evening, Oct. 20th under the direction of their acclaimed Executive Chef, Jason McClain. The co-founders of the very organized Quebec (Canada) Street Food Association (Guy Vincent Melo & Gaelle Cerf) are with us to report on the recent developments. They also coordinated the food elements at the recent YULEAT Festival over Labor Day Weekend at the Old Port of Montreal. The very best of Quebec’s food trucks were serving their signature items there. A truck was even baking pizzas to order from a wood-burning oven!

Gaelle is a partner in the pioneering food truck, Grumman 78. This was the first food truck in Montreal. They specialize in street tacos using soft tortillas. The inspiration came as a result of the partners 2010 visit to Cabo San Lucas.

Louie JocsonFinally a chance to chat with Guest Host Chef Louie Jocson, the new Director of Culinary Operations for the growing Family of Zov’s restaurants. Chef Louie most recently created the highly regarded Red Table in Huntington Beach, a locals’ favorite. He sold his interest to his former partners right before joining Zov’s.

Chef Louie has come full circle with Zov Karamardian. He started his career in the restaurant business at age 15 washing dishes and helping in the kitchen at Zov’s Bistro before enrolling in culinary school in San Francisco (California Culinary Academy) and working his way up the ranks at many of Orange County’s top restaurants in the ensuring years. Zov wrote the needed Letter of Recommendation for Louie to be accepted to culinary school at age 18.

Earlier in his career he was the Co-Executive Chef of the highly regarded Antonello’s in South Coast Plaza Village.

It’s a cooking family. Louie’s older brother, Carlito, is the long-time Executive Chef for Yard House and is an original partner. It’s now owned by Darden Restaurants.

Look who is turning 50 this year! 2015 marks the 50-year legacy of dining at Five Crowns in Corona del Mar. To celebrate, the Lawry’s family and Executive Chef Steve Kling have unveiled a brand new menu and beverage program unlike any other menu this fabled establishment has offered in its 50-year history. It’s absolutely not your Grandparents’ Five Crowns anymore (although they are still most welcome.) General Manager Jim Colombo (who is also a chef by training) and resident “Mad Bar Scientist Amber” join us with a tempting overview of the enhancements.

Top of the Market, located on the Bay in San Diego just South of the USS Midway Museum offers an extensive variety of fresh fish, oysters and shellfish with a sophisticated twists. New executive chef, Ivan Flowers, has only enhanced the already proven concept. Incomparable views of San Diego Bay, Coronado and Point Loma make Top of the Market the ideal location for destination dining while in San Diego. It’s Santa Fe, New Mexico-style cuisine with rich, bold flavors and a lot of imagination. Chef Art is with us for the menu highlights.

Blue Ribbon Cupcake ChallengeThe 3rd Annual Blue Ribbon Culinary Cupcake Challenge 2015 is March 22nd from 1 to 4:00 p.m. at the Grand Ballroom of the Pechanga Resort & Casino in Temecula. Professional and amateur bakers will compete for cash prizes, category awards and Temecula’s “People’s Choice Award.” Admission, including tastings, is a modest $25.00 per guest. The charitable beneficiary is Rancho Damacitas Children & Family Services.

The tour is aligned with the modern-day good food movement – notable chefs, barrier-breaking women, artist-like butchers, spirited bartenders, top winemakers, brewers, distillers and brazen pastry talent working together to prepare an epic feast celebrating responsible family farming.

This culinary experience features five top chefs in a one-of-a-kind culinary competition featuring over 36 dishes prepared from locally-raised whole heritage breed pigs with virtually endless wine, brews and spirits. This year’s competing chefs include Tony DiSalvo of CAST at the Viceroy Santa Monica – The Official Host & Hotel, Ricardo Zarate of Chef Zarate, Walter Manzke of Republique, Kris Morningstar of Terinne, and Steven Fretz of The Church Key. The refreshed menu presents nearly three times the culinary selections of past menus including a broad array of starters, main dishes, new family-style options and seafood selections. It breaks guests out of the expected course structure of fine dining. The fare pays homage to some of the Five Crowns heritage items, but with a modern twist. The new menu and beverage program are only the beginning of exciting Five Crowns at 50 announcements expected throughout the year.

There is also some quiet conversation about a “rediscovered” hidden speakeasy.
