Leah Chase, lovingly referred to as the Queen of Creole Cuisine, was the executive chef and co-owner of the historic and legendary Dooky Chase’s Restaurant. She was a major supporter of cultural and visual arts and an unwavering advocate for civil liberties and full inclusion of all. She was a proud entrepreneur, a believer in the Spirit of New Orleans and the good will of all people, and an extraordinary woman of faith.” The National Food and Beverage Foundation has mounted a novel campaign to honor Chef Chase’s memory in New Orleans. Philip Dobard of National Food & Beverage Foundation dishes up the specifics for us.

Restaurateur Tim Foley (Truxton’s Bistro) and partners have caringly overhauled a former dive bar in Redondo Beach into a handsome, and welcoming, neighborhood cocktail lounge. The space has transformed into Georgia’s Cocktail Lounge, featuring an accomplished and genuinely friendly bartending staff.

“Baker to the Stars” Mani Niall is fondly remembered for the groundbreaking Mani’s Bakery in Los Angeles launched in 1989. For the last 6 years he’s been the proprietor of Sweet Bar Bakery in Oakland which he sold last year. Mani was back in Los Angeles in May working with the baking and pastry staff at Akasha in Culver City refining the menu and developing new craveable creations. For the last month he was the chef in residence at Playa Viva in Guerrero, Mexico. Playa Viva is an eco-luxury boutique hotel and treehouse resort on the beach with their own farm. We’ll find out what’s on the rise with Chef Mani.

Love & Salt is a restaurant story that begins with Cafe Pierre, a local classic restaurant birthed by Guy Gabriele in 1977 to bring a taste of France to Los Angeles’ South Bay. While Cafe Pierre was a beloved part of the community for nearly 37 years, in 2014, Guy and his daughter Sylvie Gabriele, now the owner of Love & Salt, closed the restaurant to bring new life to the iconic space with a fresh look and Italian flair. As of last year a creative new chef (Chris Feldmeier ex- Moruno) is behind the stoves. We’ll get a tasty update from Sylvie Gabriele.

Peter Merriman (the Founder of Hawaii Regional Cuisine) has been a culinary pioneer in Hawaii for over 30 years. Known as the original “locavore”, Peter is a vocal champion of Hawaii’s farmers, ranchers and fishermen. His restaurants, starting with the iconic Merriman’s Waimea in 1988, showcase island grown and harvested foods through simple preparations that reflect the myriad flavors of Hawaii’s multiculturalism. Dubbed the “Pied Piper of Hawaii Regional Cuisine” by The Los Angeles Times, he is a continuing inspiration to Hawaii’s thriving culinary scene.” Chef Peter Merriman is our very special guest.

Leah Chase, lovingly referred to as the Queen of Creole Cuisine, was the executive chef and co-owner of the historic and legendary Dooky Chase’s Restaurant. She was a major supporter of cultural and visual arts and an unwavering advocate for civil liberties and full inclusion of all.

“Chef Leah was a proud entrepreneur, a believer in the Spirit of New Orleans and the good will of all people, and an extraordinary woman of faith.”

“In a town deeply divided by segregation, Dooky Chase’s Restaurant was one of the only public places in New Orleans where mixed race groups could meet to discuss strategy for the local Civil Rights Movement. Although such gatherings were illegal through most of the 1960s, Dooky Chase’s was so popular; it would have caused a public uproar if local law enforcement had interrupted the meetings. Black voter registration campaign organizers, the NAACP, backdoor political meetings and countless others often found a home at Dooky Chase’s, and Leah cooked for them all.“

The National Food and Beverage Foundation (based in New Orleans) has mounted a novel campaign to monumentally honor Chef Chase’s memory in New Orleans.

Tim Foley of Truxtons American Bistro and Georgias LoungeRestaurateur Tim Foley (Truxton’s Bistro) and partners have caringly overhauled a former dive bar in in Redondo Beach into a handsome, and welcoming, neighborhood cocktail lounge. The appealing result is Georgia’s Cocktail Lounge, featuring an accomplished bartending staff.

“Tim Foley, Jonathan Dahl, and Jocelyn Kaylene are thrilled to share their first concept, Georgia’s Cocktail Lounge. The eclectic tapas menu offers comforting bar bites as well as rich treats to satisfy those late-night munchies. The cocktail program features oldies but goodies as well as uniquely crafted cocktails all from fresh, local ingredients. Expect local craft beers and spirits to challenge the more adventurous drinkers.”

In the specialty cocktail realm look for the Grandma Georgia. It’s Wild Turkey rye, Laphroaig scotch whisky, coffee & bourbon-aged bitters, sugar cube, orange zest and Luxardo cherry.

Baker to the Stars Mani Niall“Baker to the Stars” Mani Niall is fondly remembered for the groundbreaking Mani’s Bakery in Los Angeles launched in 1989. For the last 6 years he’s been the proprietor of Sweet Bar Bakery in Oakland which he sold last year.

Mani is also the creator of the intriguing fauxnut (an acclaimed, alternative donut that is not fried, low in fat and absolutely delicious.) It was developed for the actor Danny DeVitio for the Oscar-nominated feature motion picture, Other People’s Money.

Mani was back in Los Angeles in May working with the baking and pastry staff at Akasha in Culver City tweaking the menu and developing new creations. For the last month he was the chef in residence at Playa Viva in Guerrero, Mexico. Playa Viva is an eco-luxury boutique hotel and treehouse resort with their own farm.

“Two more fine dining restaurants were added to the Merriman’s Hawaii group in 2008 and 2009 – Merriman’s Kapalua, on the grounds of the scenic resort on Maui’s West Side, and Merriman’s Fish House in Poipu, Kauai. In August the James Beard Foundation announced the ten inaugural recipients of the JBF National Scholars Program. We’ll meet the West recipient of the National Scholars Program, Holland Dougherty, who is at University of California, Davis.

We’re hearing a lot from high-end steakhouses talking about premium aged beef. There is even a butcher shop/restaurant locally highlighting a burger with a 100-day dry-aged beef patty. What should we know about aging beef ? Joining us to chat about aging beef are the “Meatheads” from West Coast Prime Meats, Jay Henderson and Terry Hanks. They have over 50-years of combined, hands-on experience in the business! 

The Mad Hungry Woman blogger, Anita Lau, joins us with a gem of a San Diego County dining discovery in Del Mar. Earlier in his career the chef there was part of the opening team at Marche Moderne in South Coast Plaza as well as Charlie Palmer’s at Bloomingdales in South Coast Plaza.

Our friend and colleague, Anne Marie Panoringan (OC Weekly’s blog), was the first journalist to break the story (August 30th) that Executive Chef Jason Montelibano was departing EATS Kitchen at Hotel Irvine to return to Chapter One: The Modern Local in Santa Ana. Time to catch-up with Chef Jason (a.k.a. Chef Chicken Wing.)

“We are proud that our Foundation’s newest scholarship program is committed to awarding $20,000 in financial aid to ten extraordinary scholars each year. A desire to pursue a career in the culinary arts is no longer limited to cooking in the kitchen,” said Kris Moon, vice president of the James Beard Foundation. “Just as the types of careers available in the culinary arts have evolved, so too is the Foundation’s scholarship program. The National Scholars Program supports a diverse group of students exploring virtually every educational discipline, whether that be history, anthropology, economics, management, or the sciences—as viewed through the lens of food.”

This year, and in each subsequent year, up to ten annual scholarships in the amount of $20,000 each will be granted. To ensure regional diversity, one awardee is selected from each of the ten geographic regions defined by the James Beard Foundation Awards.

The JBF National Scholars Program is a part of the larger James Beard Foundation Scholarship Program, which is awarding more than $750,000 in financial aid available in 2016, the largest annual total in the Foundation’s history.

Established in 1991, the scholarship program assists aspiring and established culinary professionals who plan to further their education at a licensed or accredited culinary school or hospitality institution, college, or university. In the past 25 years, the program has not only grown in visibility and financial scope, but in the breadth of subjects its recipients have embraced. As of 2016, the Foundation will have awarded over $6.5 million in financial aid to more than 1,800 recipients.

On October 11, the Pacific Food & Beverage Museum (PacFAB), in collaboration with Women Who Whiskey – Los Angeles, will host a dinner featuring five highly distinctive styles of California whiskey, each paired with a sumptuous dish from the kitchen of 1212 Santa Monica, the newest culinary star on Santa Monica’s Third Street Promenade. Diners will enjoy the five whiskeys listed below, both neat and cocktailed, and a diverse five-course menu featuring lamb, pork belly, roasted root vegetables, and much more.

A portion of all proceeds support the National Food & Beverage Foundation (NatFAB), home of PacFAB, The Museum of the American Cocktail, and the Southern Food & Beverage Museum.

Dinner is $85 for all NatFAB, Women Who Whiskey, and Culinary Historians of Southern California members, or $95 for non-members, and includes tax and gratuity. Calendar sales benefit Dine LBC Originals Marketing Fund that provides marketing and public relations support to participating independently owned restaurants year-round.

Dine LBC – Long Beach Restaurant Week founder Terri Henry conceived the idea after seeing “Kitchen Ink” editorial feature in an Orange County publication several years ago. She was looking to bring the concept to Long Beach but wanted to put a unique spin on it, hence the calendar idea was born.

“We wanted to produce a unique promotional piece that showcases the individual personalities of the culinary talent here, which in so many cases include body ink,” said Henry. “The calendar is our way of paying homage to those behind the scenes of our delicious dining experiences in Long Beach.”

In addition to sampling over 100 styles of craft beer guests have the opportunity to taste and savor eight varieties of house-prepared chili, fired up by the award-winning chefs at Pechanga Resort & Casino. It’s a yearly highlight.

A new chili champion was crowned by the guests last year at the annual Pechanga Microbrew Festival and Chili Cookoff. Temptations Food Court chef, Marlene Moore, tantalized the sold-out crowd with her “Temptation” Hearty Southern Style Chili. She edged out seven other Pechanga chefs’ chili varieties which included Texas-style chili with trio of meat, steak chili mac, and black bean chili con carne, with poblano rajas, crispy pork and shishito peppers. In a spirited competition Chef Marlene will be defending her title on June 11th.

With 219 votes out of a total of 914 from 2015 Microbrew Festival attendees, Chef Moore, originally from Trinidad and Tobago, unseated Chef Damian Stanley (the Executive Sous Chef of Pechanga) who had held the chili throne for two years. Stanley received third place with 153 votes. Kelsey’s chef, Ronnel Capacia, came in a close second with 155 votes.

One secret ingredient is out…We know that Chef Ronnel’s chili creation for 2016 will use Golden Road Brewing’s Get Up Offa That Brown, a toasty brown ale, in the recipe.

For foodies seeking a special dessert conceived from the opening era, this is a rare opportunity to indulge in a limited-edition sweet-salty potato-chip sundae inspired by Pier history and created by Kevin McCafferty, dessert historian and owner of Soda Jerk’s soda fountain. The Brass Ring Sundae is one scoop of salted caramel topped with caramel sauce, one scoop of vanilla ice cream with chocolate, all covered in crushed potato chips with a single chip (the brass ring) on top.

The Looff Hippodrome is on the National Register of Historic Places since 1987 and was declared a Santa Monica Landmark in 1976. “When it first opened, the sound of the band organ from the Carousel could be heard all the way to downtown Santa Monica,” explains Jim Harris, historian for the Santa Monica Pier Restoration Corp. and author of the acclaimed book, Santa Monica Pier – A Century on the Last Great Pleasure Pier. “In many ways, it was and remains the heart of the city and we are excited to celebrate Looff’s dream 100 years later.  It is a testament to his great vision that the Hippodrome has withstood the test of time.”

100 years later, the Looff Hippodrome remains an example of timeless design and continues to stand as a testament to Looff’s vision.  The 100-year celebration will take place on Sunday, June 12, 2016 from 11am – 7:00pm.

Each participating restaurant from twelve unique neighborhoods in the city offers a three course menu priced at $20, $30, $40 or $50, either per guest with wine pairing options at fine dining locations OR dinner for two priced at $20, $30, $40 or $50, where diners share an appetizer, each enjoy their own entree, then share a dessert at more casual establishments. The annual Dine LBC – Long Beach Restaurant Week is taking place April 23 – May 1, 2016. Each participating restaurant from twelve unique neighborhoods in the city offers a three course menu priced at $20, $30, $40 or $50, either per guest with wine pairing options at fine dining locations OR dinner for two priced at $20, $30, $40 or $50, where diners share an appetizer, each enjoy their own entree, then share a dessert at more casual establishments. Producer Terri Henry and Executive Chef David MacLennan of James Republic (an encoring participating restaurant) are our guests.

The Pacific Food & Beverage Museum is inaugurating The Thoughtful Feast,” a new series of curated dinners that highlight the culinary heritage of Southern California, the Pacific Coast, American West, and beyond. The first dinner on April 11th will focus on a region of the American South that in the early 1700s developed a cosmopolitan cuisine. Host Chef Brian Dunsmoor of Hatchet Hall in Culver City and The Pacific Food & Beverage’s Museum’s Philip Dobard are with us to set the ample table.

Noted gourmand Darrell Corti of Corti Brothers gourmet grocery and spirit purveyors in Sacramento is the Chairman of the globally respected L.A. International Extra Virgin Olive Oil Competition. We’ll chat about the Best of Show award recipients and lots more. TheDailyMeal.com has dubbed him one of the coolest people in food and drink in America.

Chef Michael Puglisi (ex-Bouchon Beverly Hills) is the Electric City Butcher at the 4th Street Market in Santa Ana. He was greatly influenced by a cousin in Sicily who has a popular, neighborhood butcher shop there. Chef Michael is a custom, whole animal, artisan butcher. We’ll meet him.

Executive Chef Amar Santana (a C-CAP graduate) is the Proprietor of Broadway by Amar Santana in Laguna Beach and the new Vaca in Costa Mesa. Both restaurants have highly innovative beverage programs to compliment the stellar cuisine. Chef Amar was also one of two finalists on Bravo’s Top Chef Season 13 which just concluded with a cliff-hanger of a two-part finale in Las Vegas. Chef Amar is our guest.

The 3rd Annual “The Big Cheese” Grilled Cheese Festival & Competition returns to Provisions Market in Orange on Tuesday, April 19th. Provisions Market and OC Baking Co. will celebrate National Grilled Cheese Month with fellow OC Chefs and a ProAm Challenger in an intense (but light-hearted) grilled cheese competition. Event co-founder, Chef Greg Daniels of Provisions, joins us with the gooey overview courtesy of Tillamook County Creamery Association.
