While we were waiting to connect with Chef Gavin in Minneapolis, Kedric explained the fascinating evolution of restaurants over the years at South Coast Plaza. There is something for every taste and price level but the accent is always on quality. No Food Court there. For instance the long-running McDonald’s was replaced last year by Din Tai Fung a favorite for Shanghai-style soup dumplings with a worshipful, foodie cult following.

Gavin kaysenIn the words of Chef Gavin Kaysen : “In the past year, I’ve left New York City where I had the pleasure of cooking alongside Daniel Boulud running his Café Boulud brand; opened Spoon and Stable in my hometown of Minneapolis; served as the head coach for Team USA as we won a record-breaking Second Place in the Bocuse d’Or; and led my restaurant to become a semifinalist for Best New Restaurant from the James Beard Foundation Awards. I’m looking forward to sharing the next steps of my journey with you.”

First we’ll chat with Gavin about his work with Team USA and Bocuse d’Or USA Foundation which is now known as men’tor BKB Foundation. Chef Gavin represented the United States at the 2007 Bocuse d’Or, a prestigious, international culinary competition hosted biennially in Lyon, France.

He was personally selected by Chefs Daniel Boulud and Thomas Keller, both men’tor BKB Foundation Directors & Founders, to serve as the Head Coach of the Bocuse d’Or USA Team in both 2013 and 2015.

The ment’or BKB Foundation’s Board of Directors and Management selected Tessier and Stover to compete based on their dedication to the craft, experience working in precise and innovative kitchens, technical expertise, and their steadfast desire to place USA on the podium in 2015.

“I’ve followed the Bocuse d’Or closely for years, and was inspired to apply after my trip to watch the competition in Lyon in January of 2013,” says Tessier. “It was there I realized that the Bocuse d’Or is not an individual competition – it is in the strength of the team that success and victory lie. It’s not just about preparing the dishes; it’s about impacting the perception of American chefs and our country on the worldwide stage. I want to unite the US in that common goal.”

Tessier currently sereves as Executive Sous Chef at The French Laundry. Stover is currently the Chef de Partie at The French Laundry.

The chefs hope to dine at Bocuse (L’Auberge du Pont de Collonges) while in Lyon in addition to a private dinner at the American Embassy in Paris.

db brasserie in Las Vegasdb Brasserie boasts a wine list of approximately 300 international selections, curated by Boulud’s group Wine Director Daniel Johnnes and db Brasserie Sommelier Devin Zendel.

The list pays tribute to the glories of American Wine, which are presented in three categories : PIONEERS ‘the first to prove the quality of American terroir’; NEW FRONTIER ‘young wineries inspired by their old-world counterparts’; and CLASSICS ‘next generation American winemaking, classics in their own right’.

The spacious restaurant seats 280 diners, including two private dining rooms, as well as a casual bar and lounge.

Located at the start of Restaurant Row (in the former Valentino Las Vegas space,) just off the casino floor, db Brasserie is accessible from both The Venetian and Palazzo.

Later in the Summer Chef Boulud will be opening a new restaurant (DBGB) in Washington, DC. It’s a return, of sorts, for him to the Nation’s Capital where he started in America.

Chef Boulud is The Chairman of Bocuse d’Or USA (Thomas Keller is the President) supporting Team USA in the prestigious international culinary competition which is the Bocuse d’Or held in Lyon every other year. Daniel explains why this is very important to the American culinary community. The next competition in Lyon is set for January 27 & 28th in 2015.

Chef Carlos was part of the opening team of the Paris Hotel on The Strip in Las Vegas. He then moved to Colorado to serve as Executive Pastry Chef for Sky Goble at the Brown Palace Hotel in Denver. A year later, Enriquez joined Goble at the Ahwahnee Resort in Yosemite National Park. In 2006 Chef Carlos returned to Las Vegas and worked as Assistant Pastry Chef at the Hard Rock Hotel and Casino, and later at Alex Restaurant at Wynn Las Vegas. He was Executive Pastry Chef at Café del Rey in Marina del Rey before joining the Patina Restaurant Group as Corporate Pastry Chef in 2012.

Pascal OlhatsThe Dean of French Chefs in Orange County is the ever charming Pascal Olhats of the Pascal Epicerie in Newport Beach. This is located next door to the site of his long-running Traditions by Pascal fine dining restaurant which he sold last year. Pascal originally came to Orange County in 1984 to open Hotel Le Meridian in Newport Beach. The property is now the Fairmont Newport Beach. Earlier in his career he worked for Master Chef Paul Bocuse (a French culinary legend) in Lyon.

In Newport Beach Pascal also operates Brasserie Pascal in Fashion Island and Café Jardin in the Sherman Library and Gardens in Corona del Mar.

Pascal talks about a new fundraising effort he’s putting together to benefit the Orange County Food Bank.

Gavin kaysenGavin Kaysen is the greatly respected Executive Chef and Director of Culinary Operations for Daniel Boulud’s Café Boulud in New York, Palm Beach and Toronto.

He put previously San Diego on the national culinary map during his much-praised tenure at El Bizcocho at the Rancho Bernardo Inn. Fortunately for us he finds his way back to SoCal periodically to cook at very special fundraisers.

In his spare time he’s the Head Coach for Bocuse d’Or Team USA 2015. Chef Gavin has completed in this prestigious International Culinary Olympics and explains what the level of competition is all about. It’s a year, plus, of rigorous practice. The competition itself is two very intensive days and 24 countries complete. He’s been associated with the American efforts for the Bocuse d’Or for some nine years.

Chef Gavin accurately describes it as the World Series, Stanley Cup and Super Bowl of professional cooking. It’s every two years in Lyon, France.

Barbara FairchildBarbara Fairchild is a respected food journalist, cookbook author, consultant, and educator. She is best known to us as the long-time former editor of Bon Appetit Magazine when they were based in Los Angeles.

This summer she taught a course in the Arthur L. Canter Journalism Institute at the prestigious New York University. Barbara tells us all about that as well as provides us with some great Manhattan dining suggestions ranging from a deli find to fine dining Italian and a comfortable celebrity chef restaurant that’s really worth going to.

Merrin Mae FuentebellaChef Merrin-Mae is a cheftestant on the first season of Food Network’s high pressure “Cutthroat Kitchen” hosted by Alton Brown. Her episode is entitled “Kiss My Grits” and was first aired on October 6th.

The level of competition was particularly intense and the sabotages were devilish. Chef Merrin-Mae made us proud in SoCal (she is a local) and she won the episode. One of the other cheftestants was a “Chopped” winner and was eliminated after the first round!

She currently works at Alma with executive chef Ari Taymor. When she did the show she was part of the culinary team at Sotto.

The latest fad diet that is getting a lot of attention is the Paleo Diet (also known as the caveman diet.)

Jason Kessler of Food RepublicFood journalist Jason Kessler of Food Republic and Bon Appetit was actually on the diet for 40 days and shares his experience with us. Jason’s observation is that because the diet is so restrictive you can drop some weight rather quickly. The severely limiting factor is that it gets monotonous rather fast.

anita-lauAnita Lau of the Mad Hungry Woman blog is with us with a San Diego dining discovery. Anita was a nominee for a Golden Foodie award in Journalism this year.

Anita’s find is Ristorante Kaz. This is an intriguing Japanese Italian fusion cuisine spot. Anita’s favorite bite was an angel hair pasta dish with creamy sea urchin with spinach and salmon roe.

Elizabeth WhittFeeling ambitious in the kitchen…? Time to get a running start on holiday cooking and entertaining. Our superstar chef instructor, Elizabeth Whitt, of www.ChefElizabeth.com is with us again to get those holiday preparations pointed in the right direction with relative ease.

Pumpkin is in this year. Chef Elizabeth has both a savory and sweet recipe to add to your holiday collection. First up is an incredible Pumpkin Risotto with a fresh baking pumpkin or butternut squash. For dessert there is a not too sweet Pumpkin Cheesecake. Yum….!

When Chef Jet has his own culinary questions he turns Le Cordon Bleu, Paris-trained to Chef Elizabeth. She has a series of popular holiday classes coming up that always sell out early. Daniel: My French Cuisine Cookbook by Daniel BouludDaniel touched on the part of his book focusing on what he prepares at home when he’s cooking more casually for friends. It is four seasonal menus from his personal favorite French culinary regions including his native Lyon.

Chef Boulud is making a rare appearance in Los Angeles the Week of October 21st supporting the release of the cookbook.

On October 23rd he’ll be at Hotel Bel-Air cooking a sumptuous five course dinner with Wolfgang Puck.

On Thursday, Oct. 24th at Noon, Chef Daniel will be signing copies of DANIEL: My French Cuisine at Whole Foods at 6350 W. 3rd St. in Los Angeles across the street from the Original Farmers Market at 3rd and Fairfax.

It’s held every other year and is considered the pinnacle of international cooking competitions. The chefs have an intense five-and-one half hours to prepare a dazzling meat platter and a plated fish course which is then judged by an international panel of respected chefs.

Chef Rosendale and his commis, Corey Siegel, spent a year training every day for this prestigious competition. A duplicate of their kitchen in Lyon was created at The Greenbrier to practice in.

Team USA had a sizeable rooting section cheering them on in Lyon. Thomas Keller is the Bocuse d’Or USA foundation’s President and he was in Lyon, too. USA placed a respectable 7th Place which was in the upper third of the competitors.
