Chef Jet and Producer Andy preview the show.

Valentine’s Day is fast approaching so plan ahead and don’t panic. It falls on a Friday this year. Friday is an especially tough day for restaurants due to Valentine’s Day anxiety so if you want to be a bit more relaxed make your plans for Saturday or Sunday instead. Still the Valentine’s Day orbit but a bit less crazed for the restaurant. You’ll definitely have better service…

Chef jet Tila and Alton BrownFood Network’s “Cutthroat Kitchen” with host Alton Brown is back on Sunday nights for Season 2. Our own Chef Jet Tila is the most frequently appearing solo judge on this tough competition show that requires strategy as well as cooking chops. Look for Jet’s new episodes starting in February.

Congrats to Chef Chris Oh of Seoul Sausage Co. in West Los Angeles. Last Sunday (Jan. 26th.) he competed against three other chefs on Food Network’s “Cutthroat Kitchen.” He won big and took home the most cash of any winner to date!

Everyone’s favorite sexy Aussie Chef is Curtis Stone. He’s opening an intimate new restaurant on Feb. 1st and we’ll get all the 411 right from the source. Fine dining chef Hans Rockenwagner, in recent years, has become known for his line of artisan breads. He’s just opened his most ambitious bakery café to date in Brentwood and joins us to provide the details. Wolfgang Puck is back in Orange County with the newly launched Puck’s Tavern at Honda Center, home of the Anaheim Ducks. The executive chef of Wolfgang Puck Catering is with us to preview what’s on the menu.

All of that and lots more incredible deliciousness on the “SoCal Restaurant Show.”

Curtis StoneYou know Aussie celebrity chef, Curtis Stone, from Bravo’s “Top Chef Masters” which he hosts. He’s now a resident of Los Angeles.

What you may not know is that he has a serious culinary background. He trained with the legendary English Chef, Marco Pierre White. Chef Curtis worked his way up Marco Pierre White’s tall culinary ladder and eventually became the Head Chef of Quo Vadis in London.

On February 1st Curtis Stone opens Maude in Beverly Hills. Maude is named after his grandmother. It’s an intimate 25 seats and Chef Curtis will actually be there cooking. The menu will change monthly and all of the nine tasting plates served each night will contain a featured ingredient.

His most recent cookbook, What’s for Dinner?: Delicious Recipes for a Busy Life was published last year by Ballantine Books Hardcover. The concept is getting dinner on the table without a hassle. The book features 130 effortless and inspired recipes that carry Chef Curtis’ promise of working.

Hans RockenwagnerChef Hans Rockenwagner burst on the local Venice dining scene in 1985 when he opened the original (40 seat) Rockenwagner on Abbot Kinney Blvd. where Joe’s is now.

In 1991 Rockenwagner moved to a much larger space in the Frank Gehry-designed Edgemar Complex in Santa Monica.

White asparagus, in season, became a signature menu item.

Hans eventually discovered there was more money in artisan bread and eventually closed Rockenwagner to concentrate on his growing wholesale bread baking business. He now has 60 bakers working around the clock seven days a week! Rockenwagner Bakery is a fixture at area Farmers Markets including the Sunday Beverly Hills Farmers Market.

Cafe RockenwagnerIn addition to the growing wholesale bakery Hans Rockenwagner has a network of busy bakery cafes in Santa Monica, Venice, and Mar Vista. The most ambitious café to date just launched in Brentwood. This Café Rockenwagner is in the bw (a high-rise luxury apartment building) at the corner of Barrington Ave. and Wilshire Blvd.

Besides a full food menu there is on an on-site pastry chef here so there is an impressive selection of fresh breakfast pastries, desserts, breads and pretzels available.

Pucks Tavern at Honda CenterCelebrated chef Wolfgang Puck and Wolfgang Puck Catering have just launched two new dining destinations at Honda Center, the home of the Anaheim Ducks. They are Puck’s Tavern, an approachable fine-dining restaurant serving modern comfort food and The Window at Puck’s Tavern, a made-to-order pizza concession stand. Both operations are located on the South Side of the arena’s main level.

Open during Honda Center’s events, Puck’s Tavern (230 seats) caters to both the general public and ticketholders alike. The 7,000 square-foot, indoor-outdoor restaurant features a direct entrance to the arena allowing a seamless transition from a sit-down meal or private event to the evening’s entertainment.

Matt Bencivenga, Executive Chef and Partner of Wolfgang Puck Catering joins us to chat about the opening of Puck’s Tavern and Wolfgang’s high-profile return to Orange County.

Tristen Beamon and Kyle MeyerIf you’re a wine lover then the upcoming Pacific Coast Wine Festival evening on March 1st at The Island Hotel in Newport Beach to benefit the Pacific Symphony is definitely for you.

The evening starts off with tastings from highly touted wineries including Domaine Faively and Nickel & Nickel. The live and silent auction will feature renowned selections such as Margaux, Mouton, Paul Hobbs, and Screaming Eagle. The sumptuous dinner will be followed by a select chocolate and port tasting.

All the impressive wine selections for the benefit and auctions have been meticulously curated by Tristen Beamon and Kyle Meyer of Orange County’s Bestwinesonline.

Lechon Porchetta by Susan ParkYou can aid the victims of Typhoon Haiyan in the Philippines and enjoy some great Filipino food. There is a huge Filipino community right here in Los Angeles County.

In addition to the high profile benefit for typhoon relief at The Church Key on the Sunset Strip on Sunday (which we’ll be talking about later in the show) there is a more populist fundraiser at Bamboo Bistro in Panorama City on Sunday, Dec. 15th from 4 to 8:00 p.m.

Pinoy food will be there in abundance expertly prepared by L.A. chefs including Chef Mayet Cristobal, the Executive Chef of the Getty Museum. She will be serving Beef Short Rib Adobo. The minimum donation is a modest $20 per adult and there will be live music.

Barbara FairchildThe long-time former editor of Bon Appetit Magazine, Barbara Fairchild, is back with us reporting from New York. Barbara is also an educator, best-selling cookbook author, food and travel journalist and much-in-demand speaker.

Barbara has recently had a couple of culinary excursions to the San Francisco Bay Area and will report on dining spots she enjoyed that merit your attention. She will also speak about an unusual evening she was part of honoring San Francisco’s STARS, a long-departed celebrity chef driven restaurant that, in it’s day, was the Spago of San Francisco. The proprietor/executive chef Jeremiah Tower (now a resident of Mexico) was in attendance.

Roberta Koz WilsonIt’s Holiday Time and our thoughts turn to incredible, fresh-baked, small batch, high-quality cookies as special gifts. That can only mean a chat with Roberta Wilson (jazz saxophonist great Dave Koz’s sister) the force behind Cookies for a Koz. Ten per cent of the proceeds are donated to the Starlight Children’s Foundation. Dave Koz is a Global Goodwill Ambassador for them.

Roberta’s and Dave’s late mother, Audrey, perfected the recipe for a great chocolate chip cookie and that’s the legacy of the company. The much-appreciated cookies were a door-opener all over town for the youthful Dave as his career was just beginning.

Carla HallFood fans know Chef Carla Hall as the “Hootie Hoo” lady and fan favorite from multiple seasons of Bravo’s “Top Chef.” She is now the co-host of ABC’s daytime lifetime series, “The Chew.” Last week “The Chew” celebrated their 500th episode and the show continues to gain in popularity. Carla also is the author of Cooking with Love: Comfort Food That Hugs You, newly available in paperback.

Carla is being honored by Zov Karamardian of Zov’s Bistro in Tustin at her Culinary Concert to benefit the James Beard Foundation on Sunday, February 9th. It’s a great holiday gift for that special foodie in your life.

That Sunday Carla and Zov will conduct a highly entertaining cooking class for the guests followed by a lavish lunch. Carla will be available to sign copies of her book and interact with the guests. It all starts at Noon.

Devon EspinosaDevon Espinosa (a C-CAP graduate) is one of the rising young stars among the master bartenders in the West. He created the cocktail program at ink. and Pour Vous and he’s the bar chef for the new The Church Key on the Sunset Strip. Some of his cocktails are canned for freshness.

Devon is also one of the organizers of a high-profile benefit at The Church Key on Sunday, December 8 from 5 to 9:00 p.m. for Typhoon Haiyan relief efforts. An impressive line-up of chefs and bartenders are coming together to raise the vitally needed funds. Look for celebrity chefs Eric Greenspan, Kris Morningstar, Ray Garcia and Steve Samson among many others.

Donald WressellThere really is no finer pastry chef in America than the pleasantly low-key Donald Wressell. He was the opening executive pastry chef at the Four Seasons Los Angeles at Beverly Hills. This is the luxury property where the majority of the out-of-town Academy Award nominees stay. Every year Chef Donald would create incredible individual chocolate show-pieces celebrating each of the “Best Picture” nominees. These elaborate pieces where then featured, via photography, in the Oscar coverage beamed across the globe.

Donald has competed in the most prestigious international pastry competitions and, most recently, has coached, too. He’s judged pastry chefs for competition shows on Food Network.

He’s currently the pastry chef for the proudly American chocolate company, Guittard Chocolate Co. Guittard is based in Burlingame but Chef Donald has a test kitchen and research facility here in Los Angeles. He also teaches classes for professional pastry chefs and candy makers.

In January he’ll create the sure to be dazzling Birthday Cake for The City of Beverly Hills’ 100th Anniversary. He created another cake spectacular for Beverly Hills’ Diamond Jubilee 25 years ago while he was at The Four Seasons.

Blossom Restaurant at the Aria in Las VegasA few weeks ago Brad A. Johnson, the James Beard Award-winning restaurant critic for the Orange County Register, was with us to talk about his first 4-Star review. It’s Blossom restaurant at Aria Resort in Las Vegas.

Brad is back with us to explain his criteria for a 4-Star restaurant review and also talk about the new crop of ultra-luxe Chinese restaurants on The Strip. It’s some of the most elegant Chinese fine-dining outside of China and designed for highly discriminating (and wealthy) Chinese guests!

Dean ThomasChef Dean Thomas is the Executive Chef de Cuisine for the Europa Village Winery in Temecula and also serves as the Innkeeper for the Inn at Europa Village (along with his wife, Nicole.) Chef Dean is the unofficial executive concierge for Wine Country Temecula. When it comes to directing guests to the wineries and restaurants best suited to the visitors’ wishes Dean’s advice is the gold standard.

Chef Dean shares with us the specifics on an independent restaurant in Temecula as well as a winery restaurant that are both on his highly recommended list. He also talks about a Slow Food event he is hosting on December 12th featuring local artisan food products and cooking demonstrations.

Show 33, June 29, 2013: David Vergari, Winemaker at Thornton Winery in Temecula

Thornton Winery in TemeculaYou really know David is a regular guy when he shares with you the winemakers’ tip that after a long day of tasting and blending a winemakers’ remedy for refreshing the fatigued taste buds is to enjoy a cold beer.

Vergari is only the 3rd winemaker in the rich, 25 year history of the proudly Family-owner Thornton Winery, and he has been in residence there for three years. They are known for consistently excellent California sparkling wines but in recent years they have developed a reputation for producing significant still wines, too. He has a current release of a Nebbiolo and Vermentino (both Italian grape varietals) that he’s very pleased with.

2013 is also the 25th Anniversary of Thornton’s Champagne Jazz Series. The concerts are performed outdoors in their acoustically superior Mediterranean fountain terrace and continue through October. The intimate space overlooks the scenic Temecula Valley wine country.

Huge acts who you would normally only see in large concert halls perform in this special venue because it’s a quality space. Headliner Dave Koz performed last weekend and tonight is Spyro Gyra and Acoustic Alchemy,

Thornton Winery’s long-time executive chef Steve Pickell of Café Champagne prepares a seated picnic menu (enjoyed under a shaded canopy) for every concert. It’s really an unfussy fine-dining experience with three courses. Both Thornton and other carefully selected premium wines are suggested as appropriate pairings for each course.

The appetizer course is field-to-table as all the fresh fruits and vegetables are sourced from local family farmers. Besides the wine grapes the unincorporated Riverside County portion of Temecula is an abundant agricultural area.

Time to talk dining…

Providence RestaurantChef Jet celebrated Father’s Day at Providence in Los Angeles. This is celebrity chef Michael Cimarusti’s (ex-Water Grill) much-praised, fine-dining seafood restaurant. In addition to the expected great seafood non-stuffy, attentive service is part of the experience. There is also a very deep wine list and an outstanding bar. Jet talks about his meal there and why this is such a popular special occasion establishment.

We’ll also answer some e-mail inquiries.

Kedric Francis of Coast Magazine and the Orange County Register MagazineMr. Suave himself, Kedric Francis, is back with us. He’s the Executive Editor of Coast Magazine and co-founding editor of the revamped OC Register Magazine.

Kedric is in-studio talking about local travel opportunities for Summer. He’s got some inspired ideas for traveling on the rails and previews the new attractions at The Disneyland Resort. It’s all child-friendly, too.

The Modern Mixologist Tony Abou-GanimWe’re delighted to welcome The Modern Mixologist, Tony Abou-Ganim, to the show. He’s a master barman and part magician. Tony is based in Las Vegas. He created the entire bar program (nothing short of spectacular) for the opening of Steve Wynn’s  original Bellagio, the trend-setting casino resort of it’s time.

Tony will share his inspirations for Summer cocktails and the importance of quality ice. It really makes the difference in a properly-prepared cocktail!

The Modern Mixologist also previews his new line of custom-designed bar tools.

Man about Orange County, Kedric Francis encores for another segment. This time he’s  chatting about the just-released June Restaurant Issue of Coast.

One feature profiles up and coming areas where there are pockets of distinctive dining places. Downtown Santa Ana is one of these spotlighted dining neighborhoods.

The most interesting piece, we think, is on the best restaurants in Orange County located in the worst spots. What a fun idea…

A truly underappreciated local wine country destination is the Temecula Valley. It’s 90 minutes, or less, from most areas of Orange County. It’s probably best known as the location of the Pechanga Casino Resort (largest Indian casino & hotel property in the West) but there is lots more out there.

Thornton Winery in TemeculaWhen you cross Butterfield Stage Road going East on Rancho California Road you hit the picturesque, and delightfully rural,  wine country. The first winery property you pass is the eye-catching Thornton Winery celebrating their 25th anniversary of proud family ownership in 2013. They are especially known for their premium California sparkling wines but also produce a  distinctive line of still wines under the stewardship of winemaker David Vergari.

Since the beginning Thornton has staged a highly regarded summer Champagne Jazz Series at the winery showcasing renowned contemporary jazz artists. Dave Koz performed two concerts there last weekend. It’s a superb environment to enjoy a concert in. You can also sip wine and enjoy a three-course seated dinner in the concert area.

Show 10, December 22, 2012: Roberta Koz Wilson of Cookies For A Koz

Chocolate Chip Cookie from Cookies for a KozIt all started with Roberta’s mother, Audrey, who had a blockbuster recipe for truly outstanding Chocolate Chip Cookies.

Audrey’s son (and Roberta’s brother) happens to be acclaimed Jazz musician, saxophonist, best-selling recording artist, and radio personality Dave Koz.

Before Dave became as well known as he is today (what a performer!) Audrey’s cookies opened many doors for the then rising musician.

After Audrey passed away Roberta came up with the idea to honor the memory of Audrey by starting Cookies For A Koz, with ten percent of the sales price being donated to The Starlight Children’s Foundation where Dave serves as a goodwill ambassador.

Over the years since the start in 2008 joyful seasonal cookies have been added to enhance the variety of offerings. For instance for July 4th Apple Pies Cookies are added to the menu.

Cookies For A Koz is on a short Holiday Break but shipments will resume on January 2nd.

Canter's Delicatessen in the Fairfax District of Los AngelesSince 1931 Canter’s Delicatessen has been serving the deli obsessed and the satisfied guests keep returning. In 1948 they moved from Boyle Heights to their current location on N. Fairfax Ave. in Los Angeles. They were one of the first late-hour hangs.

Canter’s is slow to change (and proud of it) but the 4th generation of the Canter Family has listened to their guests and implemented a series of menu changes to better serve the contemporary customer.

4th generation family spokesperson, Jacqueline Canter, is our guest to explain it all. (She is also affectionately known as the Bagel Queen.)
